How much does a wheel of Organic Parmigiano Reggiano cost?

As you already know, the cost of Parmigiano Reggiano depends on whether it is organic or non-organic. The genuineness and processing costs of an organic production are clearly different from those of a non-organic one, both for Parmigiano Reggiano and for any other food product.

Once this first fact is known, the second fundamental variable is the ripening period. The longer a ripening period, the more your wheel of Parmigiano Reggiano will cost. A 12-month has a different cost than a 48-month or a 72-month (for obvious reasons of conservation, labour, storage and, therefore, additional costs for the company).

Maturation also determines the weight of a wheel of Parmigiano Reggiano. Low ripenings, being fatter and less crumbly, weigh more than higher ripenings, with opposite characteristics. Let’s say that the big watershed is the 24-month maturation (referred to a bit as the ‘middle’ maturation), which acts as a watershed between the low and high maturation Parmigiano Reggiano cheeses. We go from around 40 kg of the 12 and 18 months, to 39-38 kg of the maturations exceeding 30 months.
