We can almost see the small barn with the five cows we started with. We have come a long way since that day. Our farm has evolved, as has our work. We keep abreast of organic regulations and apply new farming methods to take better care of our cattle, which now number 500 head. Our organic Parmigiano Reggiano DOP has won prestigious awards, and we have enriched our production with ricotta, butter and fresh organic caciotta. One thing, however, has remained the same: the passion for what we do. This is the one, true engine that powers our world. Every wheel of Parmigiano Reggiano we produce tells of all this: the hard work, the craftsmanship, the territory and the immense joy we put into our work.
