Khorasan wheat is an ancient variety of triticum turanicum, of Middle Eastern origin. Its name derives from the name of the Iranian region, where it was described for the first time, in 1921 and where it is still cultivated.

It is a grain with a high protein content and due to this characteristic it lends itself to the preparation of pasta and is very versatile in the kitchen.

Processing: after a careful selection of our Khorasan wheat, stone milling takes place.

The low rotation speed of the stone throughout the milling process allows us to best preserve the quality and high nutritional values ​​of our grain. In fact, our flour contains the germ, the most precious part of the grain, rich in trace elements and mineral salts.

We then proceed with kneading and rigorous bronze drawing, then slow drying at low temperature.

Cooking times and suggestions: 5 to 7 minutes. During boiling, taste from time to time to ensure optimal cooking “to your personal taste”.

Since it is an artisanal product drawn in bronze and dried slowly at low temperature, for the boiling phase it is necessary to use at least 1 liter of water for every 100 g of product.

Store in a cool, dry place away from light and heat sources.

By law, the product shows a consumption date on the packaging, preferably within 24 months of its production date, but if stored correctly it can easily be consumed even beyond the date indicated.
