The Modenese White Cow is an indigenous breed, not very widespread and rare. Due to its low milk production, it has been gradually replaced by the much more productive Friesian breed (originally from Holland), which has meant that the native Bianca Modenese breed has almost become extinct over the years.
The Modenese white produces a delicate milk which gives Parmigiano Reggiano a unique taste.
The Parmigiano Reggiano di Vacca Bianca Modenese aged for at least 24 months ARMONIC expresses on the palate a good balance between the sweet and savory flavour, and the hints of milk and yoghurt are accompanied by notes of melted butter and fresh fruit such as banana and pineapple. The cheese is crumbly and grainy.
Parmigiano Reggiano with mountain milk made only with white Modena milk, the only Slow Food presidium of Parmigiano Reggiano. Only one form is produced per day in the world.
Composed of cow’s milk, milked morning and evening, collected immediately after milking, cooled and then left to stand at a controlled temperature.
