The first among the seniors in the family, it brings with it the unmistakable taste of organic Parmigiano Reggiano, but thanks to its ageing of at least 36 months, its flavour is well-defined, typical and dominant, and its savouriness and intensity make it important.
If dosed well, it can become a good ally in the preparation of your dishes and recipes, or proposed as the protagonist of tastings and aperitifs or for a strong characterful end to a meal. Excellent in combinationwith honey, jams, mustards, dry red wines and aged balsamic vinegar.
Composed of cow’s milk, milked morning and evening, collected immediately after milking, cooled and then left to stand at a controlled temperature.
