Strawberry and 30-month Parmigiano Reggiano Salad

Rocket 2 bunches

Parmesan cheese 30 months

Strawberries 1 basket

Balsamic Vinegar to taste

Strawberry and Parmigiano Reggiano 30 months salad is a fresh and tasty dish! Perfect for a light summer lunch with a touch of creativity. It is well known that Parmigiano Reggiano goes perfectly with sweeter ingredients, creating exceptional contrasts.

The older the Parmesan gets, the sharper and more surprising the contrast will be. For this recipe, a 36- and 48-month can also be suitable.

Preparation

Let’s take the rocket (preferably organic) and wash it well under running water (for the more careful you can add a pinch of bicarbonate of soda in the basin). We do the same with the strawberries. Once everything is clean, we take a bowl in which we will place our salad.

We first place the arugula (washed and dried) on the bottom. Then we cut the strawberries into wedges of 4 and cascade them over the rocket. At this point we take our 30-month Parmigiano Reggiano and cut it into slivers on the salad. Don’t be stingy, but don’t overdo it either.

Finally, we take our balsamic vinegar and gently drizzle it over the salad. Recommendation: do not add salt or oil. Enjoy!
